A Simple recipe using what’s in your garden this month

These vegetables were on the competition table at the last Garden Club meeting. Members bring produce from their garden and members vote for the winner. This month is was the lovely pumpkin.

Here is a simple recipe that uses up these vegetables

Zucchini Slice

Ingredients
2 large zucchini grated
1 cup of grated pumpkin
1 large onion – finely chopped
1 cup grated cheddar cheese
1 cup self-raising flour
4 large eggs
1/4 cup vegetable oil
Salt and pepper to season
freshly chopped parsley
grated parmesan cheese to top

Method

Preheat oven to 170 degrees. grease and line a 30 x 20 cm tin or shallow casserole dish
Place the grated zucchini, pumpkin and chopped onion into a large bowl, add chopped parsley, seasonings, flour and grated cheese. Beat eggs with oil and add to the vegetable mixture, Stir until well combined. Pour into the prepared tin and top with grated parmesan cheese. Bake in oven for 30 minutes or until puffed and golden.

Cut into slices and serve hot or cold. You could use the Capsicum and Cucumber with some green leaves and cherry tomatoes to make a salad to go with this. Freezes well.

You can also add chopped bacon, spring onion  or sweet corn to this recipe.
